Baba Ganoush

Recipe from FreeFOD – see original recipe here

Ingredients:

  • 2 teaspoons FreeFOD garlic replacer
  • 2 small eggplants
  • juice of 1/2 lemon
  • 2 tablespoons tahini paste
  • 1 teaspoon cumin
  • salt to taste
  • paprika to serve
  • pine nuts to serve

Method:

  1. Roast whole eggplants for 20-30 minutes at 180 degrees celcius
  2. Cut eggplants in half and scoop out the flesh
  3. Process the garlic replacer, eggplant, juice of lemon, tahini, cumin and salt in a food processor until smooth
  4. Serve with paprika and pine nuts sprinkled on top

 

Basil Pesto

Ingredients:

  • 1 cup fresh basil
  • 1 cup baby spinach
  • 1/4 cup parmesan cheese
  • 1/2 cup garlic infused olive oil
  • 1/3 cup pine nuts
  • salt and pepper to taste

Method:

  1. Place all ingredients in a food processor and process until smooth

Beetroot Dip

Ingredients:

  • 400g tinned beetroot
  • 1 cup Greek yogurt or lactose free plain yogurt
  • juice of 1/2 lime
  • 1/4 cup fresh parsley
  • salt and pepper to taste

Method:

  1. Chop beetroot finely
  2. Chop parsley finely
  3. Place all ingredients in a bowl and mix together
